Lemon on pizza? You probably think we're crazy, but TRUST. It’s zingy, fresh, and exactly what pizza as we know it was missing. I think we just came up with something really, really great, so just remember, we did it first.
Disclaimer: don’t be afraid to measure with your heart. This is your pizza afterall. Oh, and preheat your oven to 450º.
Coat your surface with flour and roll out your pizza dough. Start stretching the dough by pinching the outside in a circular motion to stretch it out. Then you can alternate between pinching the dough with your fingers, kneading it out on your work surface, and using your knuckles to pull the dough from underneath in an outward motion.
When it’s big enough, transfer it to a sheet pan lined with parchment paper and a light drizzle of olive oil.
Bake the naked pizza for 7 minutes and start prepping your toppings.
Rinse your produce and thinly slice your lemon.
After 7 minutes, remove the dough from the oven and turn the temperature up to 500º.
Brush olive oil around the edge of the dough to get a golden & crispy crust.
Add your sauce, cheese, and thinly cut lemon slices. Sprinkle the crust with a little bit of salt.
Bake at 500 for 7-10 minutes, removing once the cheese has melted.
