Prep Time: 10 minutes Total Time: 1 hour 30 minutes
Instructions:
  1. Preheat oven to 400°F. Roll pie dough on lightly floured surface into 1/8-inch thickness on a lightly floured surface. Cut into sixteen 4-inch by 2-inch rectangles, re-rolling scraps as needed. Arrange 8 rectangles in one layer, about 1-inche apart on parchment paper-lined baking sheet.
  2. Toss mozzarella with Parmesan cheese. Spoon Creamy Calabrian Vodka sauce evenly over rectangles, leaving a ¼-inch border all around outside edges. Top evenly with cheese mixture and pepperoni.
  3. Place remining dough rectangles over top, and press edges all around with fork to seal. Trim edges with a small knife to achieve a super clean look (this part is totally optional, and up to you!)
  4. Whisk egg with 1 tsp water. Brush tops and edges with egg mixture and sprinkle with flaky salt. Refrigerate for 15 minutes before baking.
  5. Bake for 18 to 20 minutes, rotating tray halfway, or until pastry is golden and flaky. Let cool slightly before serving.
