Ingredients

  • 1 red onion, thinly sliced
  • 1/2 cup white vinegar
  • 1 tbsp sugar
  • 1 tsp kosher salt
  • 1 cup crumbled feta cheese
  • ¼ cup sour cream
  • 1 large focaccia loaf, cut into 4 buns and split (each bun should be about 3-inches by 5 inches)
  • 1/2 cup Hot Honey Marinara
  • 6 oz sliced Soppressata salami
  • 1 cup arugula

Prep Time: 5 minutes Total Time: 20 minutes
Instructions:
  1. Place red onion into small mason jar or re-sealable glass container (or use a cleaned out, empty SAUZ jar!). Whisk vinegar with sugar, salt and 1 cup boiling water until dissolved. Pour over sliced onion and let stand for at least 10 minutes, or until onions are tender-crisp, tangy and their color starts changing into a bright pink.
  2. Meanwhile, add feta cheese and sour cream into food processor and blend until smoothy, fluffy and creamy.
  3. Spread feta mixture evenly over bottom half of focaccia. Dollop Hot Honey marinara evenly over top. Top with sliced salami, arugula and pickled red onion.
  4. Cap with top of focaccia and cut into 4 sandwiches. Serve with side of olives and chips or wrap them up and take them go!
