  • ¾ cup plain yogurt
  • ¼ cup SAUZ Spicy Jalapeño Pesto
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tsp honey
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp freshly cracked black pepper
  • 2 tbsp chopped green onion
  • 1 tbsp finely diced chives
  • 1 tbsp finely diced parsley
  • 5 cups thinly sliced green cabbage
  • 2 cups chopped kale
  • 1 cup half-moon cucumber slices
  • 1 cup matchstick green apple
  • 1 avocado, peeled, pitted and sliced
  • 1 cup roughly chopped toasted almonds, divided
  • ½ cup fresh mint leaves, plus extra for garnish

Instructions:
  1. Whisk yogurt with Spicy Jalapeño Pesto, lemon juice, olive oil, honey, garlic powder, salt and pepper. Stir in green onion, chives and parsley.
  2. Toss cabbage, kale, cucumber, apple, avocado, ¾ cup almonds and mint with yogurt-pesto dressing until well coated.
  3. Transfer to serving dish or plate, and garnish with remaining almonds and extra mint leaves for serving.
