Ingredients

  • 2 tbsp vegetable oil
  • 8 bone-in skin-on chicken thighs
  • 1/2 tsp each kosher salt and freshly cracked black pepper
  • 2 shallots, diced
  • 4 cloves garlic, minced
  • 1/3 cup chopped sundried tomatoes
  • Pinch red pepper flakes
  • 1 jar Sauz Creamy Calabrian Vodka
  • 1 ½ cups chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley
  • Handful of fresh, torn basil

Instructions:
  1. Heat oil in large, heavy skillet set over medium-high heat. Season chicken thighs with salt and pepper. Working in batches, place chicken thighs, skin side down, and cook for 3 to 5 minutes, or until golden and crispy. Turn and cook for another 2 to 3 minutes, then transfer to plate and set aside. Discard all but 2 tbsp of fat from skillet.
  2. Reduce heat to medium-low. Add shallots, garlic, sundried tomatoes, and red pepper flakes to skillet; cook, stirring for 3 to 5 minutes or until tender. Add Creamy Calabrian Vodka and chicken broth; stir and bring to a simmer. Stir in Parmesan cheese.
  3. Return chicken to skillet and simmer for an additional 18 to 20 minutes, or until chicken is cooked through and sauce is thickened.
  4. Sprinkle with parsley and basil for serving. Pair with your favorite pasta, potatoes, or just a good crusty baguette for soaking up all that sauce.
